Sion wins. Even the completely carbon skin of Greed wouldn't protect him from the lethal strikes of a lightsaber as hot as the flames of the Circle of Hatred. Plus, Sion can use the Force against Greed in many ways : choking him, twisting his bones and musbles repeatedly, squeezing his heart, perhaps even attracting the Philosopher Stone in his hand and breaking it.
